For the Chicken:

  • 2 large chicken breasts (about 1.5 lbs, cooked and shredded or cubed)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning

For the Cheese Filling:

  • 15 ounces ricotta cheese (full-fat)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg (lightly beaten)
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt

For the Lasagna:

  • 9 lasagna noodles (oven-ready or regular, cooked if needed)
  • 24 ounces Alfredo sauce (high-quality, store-bought or homemade)
  • 8 ounces mozzarella cheese (shredded)
  • Fresh parsley (chopped (for garnish – optional))

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Prepare Chicken: Heat olive oil in a skillet over medium heat. Add cooked chicken, garlic powder, Italian seasoning, salt, and pepper. Toss to coat and heat through.
  3. Make Cheese Filling: In a medium bowl, combine ricotta cheese, Parmesan cheese, egg, nutmeg, garlic powder, and salt. Mix well.
  4. Assemble Lasagna: Spread a thin layer of Alfredo sauce on the bottom of the prepared baking dish.
  5. Layer 1: Arrange 3 lasagna noodles over the sauce.
  6. Layer 2: Spread half of the ricotta cheese mixture over the noodles.
  7. Layer 3: Top with half of the seasoned chicken and 1/3 of the mozzarella cheese.
  8. Layer 4: Drizzle with 1/3 of the remaining Alfredo sauce.
  9. Repeat: Repeat layers 1-4 one more time.
  10. Top Layer: Arrange the final 3 noodles on top. Spread with the remaining Alfredo sauce and sprinkle with the remaining mozzarella cheese.
  11. Bake: Cover the dish with aluminum foil and bake for 30 minutes.
  12. Uncover: Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly and the lasagna is heated through.
  13. Rest: Let the lasagna rest for 10-15 minutes before slicing and serving.
  14. Garnish: Garnish with fresh parsley, if desired.

Notes

For best results, use high-quality Alfredo sauce.

To prevent sticking, make sure the bottom of the dish is well coated with sauce.

This lasagna can be assembled ahead of time and refrigerated for up to 24 hours before baking.
